Cashew nuts: an unparalleled delight

Did you know that only 28 countries grow cashews? You may celebrate because Brazil is among the ten biggest producers in the world. In 2019, 139 tons of cashews were produced here in Brazil; and, 90% of all the production is located in three states: Ceará, Piauí and Rio Grande do Norte.

In the Tupi language - said by the natives acaiu - cashew means nut that is produced. But, we are not here to talk about the accessory fruit, which is delicious and extremely nutritious. Today we are going to talk about the fruit known by us as cashew nut and which is part of the Genius Nutz delights (get to know our cashew spreads). 

It may seem weird but the cashew nut is the fruit of the cashew tree. Before being consumed as we normally do it, the fruit is roasted so that the skin can be removed naturally, and it can be salted or roasted with sugar. In general, in stores and for spread production, cashew nuts do not have any type of seasoning.

The natives, when extracting the almond from the cashew nut, used to roast the fruit directly on the fire to eliminate the cashew nut liquid. After it cooled, they used to break the shell to remove the almond. With industrialization, this method has gained more steps. 

They are: washing and humidifying, cooking, cooling, and breaking the shell and stuffing.
